Happy Easter! Vegan Deviled "Eggs" and April Goals

Happy Easter to those who celebrate! We ended up staying home so I can finish recuperating and also because hubby had a terrible headache this morning. I caught up on the Food Network shows I missed during the week, and then went to the grocery store (Acme was open today!) for a few things to make lunches for the week.

Last night I made Vegan deviled "eggs" from Happy Herbivore.  They came out really yummy! Red potatoes, hummus, Dijon mustard, a dash of Sriracha and a few spices. That was it!

Right now I'm waiting for my headache to subside enough that I can get a quick run in, but other than that, we're just taking it easy today.

I'm excited to announce I met my March goal of getting back under 120 (barely!), but failed (miserably) on total mileage. I did run the 10-miler for St. Paddy's Day, but was not happy with my time. I'm cutting myself a break though, since I was sick ;)

For April I just have 3 goals:

  1. Stay under 120
  2. Run 4 days per week
  3. Run at least one half marathon

As you can see, this was certainly not a stellar week, either with food or running. That frozen yogurt was a great comfort food, but I'm so glad it's gone! I also didn't keep track of all my coffee, which I'm sure could have filled an olympic-sized pool ;)

What Type of Runner Are You?

Happy Friday! As I mentioned yesterday, I took a quiz over at Runner's World called What type of runner are you? After carefully considering the questions there was really only one that I was on the fence about. So here are my answers:

  • Do you often vary your routes?
b) Yes, I know the town better than the postman. Exploring is half the fun.
  • How important are the health benefits of running to you?
b) I'm glad there are long-term benefits, but I'm more focused on how good running makes me feel today. 
  • You're a minute slower for a 5k than you were last year. What do you do about it?
c) Figure it's time to resume speedwork at my running club. I slack off when I'm on my own.
  • You usually run after work, but your new boss asks if you want to go out for a drink. Do you go?
b) No. When I go to bed that night, I'd much rather have gone for my run than met a -social obligation. 
  • A pain that started a few weeks ago has become worse and now you can hardly run. What do you do?
b) Hobble through a few miles at whatever pace I can manage, and ice it later.
  • What's your take on diet?
b) I don't really think about my diet in terms of running, other than I know which foods interfere with my running and I avoid them.
  • What's important in a race?
b) Good organisation. I want to be able to concentrate on my running and not have to worry about whether the course is accurate. 
d) I don't race much, but when I do a nice T-shirt and a good charitable cause. (And a medal of course!)
  • You just don't feel like running. What do you do?
b) Head out - I'll feel better once I get going. Feeling bored or tired isn't a reason not to run.

b) A weekly ritual that I enjoy.
  • What do you think about lifting weights?
b) I don't like lifting weights, but I know it helps me to avoid injury, so I do it in order to keep on running.

The Purist
You run for running's sake - you like how it feels and how it makes you feel afterwards. You might race, you might not. Running is part of your routine; it makes you feel complete. How far and how fast you run is based on how you feel that day, how nice a day it is and your surroundings.

Ten Things Thursday (continued)

Alrighty then, I feel much better now :)

4. Went to the gym and ran 3.4 miles in 35 minutes. Took it nice and easy, and now I feel pretty good! I look like a hot mess, but here's my new NMA tshirt!

10. Are any of you doing anything special this weekend? My husband and his family are catholic (I'm a non-practicing jew), so I got sucked into Easter plans. We are going to hubby's moms and I have to figure out something to make. I volunteered to work tomorrow since I've missed so much time during the past couple weeks, so I'll have to throw something together either tomorrow night or Saturday morning.  I saw a recipe for deviled eggs that look like little chicks, so I might try to make something creative like that, but without eggs. Maybe potatoes. I'll let you know if whatever it is turns out good!

Ten Things Thursday

  1. Laura Belle posted a picture of what she considers a messy desk. Ha! Let me show you what a messy desk looks like! Yes, there are 3 different coffee cups, all in use. Don't judge. And yes, I like frogs :)

     

  2. I ended up staying home from work yesterday, but came back today. I'm still not 100% but I am feeling quite a bit better. I think I've been dehydrated so I'm trying to drink more water. I suck at drinking water (other than inside my coffee). 

  3. I haven't ran since I went to the doctor last week. Today is 7 days. Today I am going back to the gym and no matter how slow I have to go I am getting a run in. Actually, I'm going right now so I'll come back and finish this later...

A Few Simple Recipes

I'm back at work today but still feeling pretty miserable. So instead of going back to the gym at lunch, I thought I'd share a few quick, simple recipes.

Super Salsa!
  • about 6 vine-ripe tomatoes (or 8 romas)
  • 1 large red onion
  • 2 jalapenos (or 1 jalapeno and 1 habanero), seeded and de-veined
  • a bunch of cilantro
  • juice of 1 lime
The simplest way to make this is to cut everything into chunks and then throw it into a chopper/blender, squeeze the lime juice over it, and blend to desired consistency. I have a Ninja and just love it! I use it at least 3-4 times per week. Sometimes I also add diced celery and/or radishes to the salsa - Yummy!

Super Salad!
  • 3 romaine hearts, chopped
  • 8 oz diced tomatoes
  • 8 oz diced onions
  • 8 oz diced celery
Combine all ingredients and store in a gallon-sized ziplock for up to a week. I top my salads with either pistachio nuts or sesame sticks. And Tahini Lime Sauce (see below).

Yeah. I know you didn't really need a recipe for salad, but I always make this right after the salsa. And cut me a break- I don't feel good ;) 

Tahini Lime Sauce/Dressing (adapted from Mama Pea)
  • 1 cup water
  • 1 cup tahini
  • 1/2 cup low sodium soy sauce
  • 1/2 cup lime juice
  • 1 Tbsp minced garlic
  • 1 Tbsp agave nectar
Combine all ingredients and store in air-tight container in fridge for up to a week. This stuff makes the best salad dressing, but can also be used as a veggie topper, pasta sauce, etc...

Serving size is 2 Tbsp: Calories 70, Fat 5g, Carbs 4g (Fiber 1, Sugar 0.1), Protein 2g

I am STILL home sick. Really thought I'd be better by now, after 4 days of antibiotics (and the other assortment of meds the doc ordered) but nooooo....

Okay enough whining.  I've come up with a plan for keeping my blog updated regularly (when I don't really have anything to share). I follow a lot of blogs that do weekly "themes" so I'm going to be more social and participate! Yes, I'm trying to work on being less socially awkward and introverted! Here's what I've got so far:

1. Describe the kind of home you would live in if money were no object. I'd love a 2-story log cabin, in the woods, with a large creek, a fresh-water lake, and lots of trails to run on. For the inside I definitely want all hardwood floors (I have a large messy dog- you should see my poor carpet!), a giant kitchen with lots of counter space, cabinets, and a huge pantry, 4 bedrooms (master, guest, office, gym), and a super-sized walk-in closet with lots of shelves, shoe racks, built in dressers, and a washer/dryer. And a big ole' fireplace of course!

2. Are you more conservative in your actions or more rebellious? Oh, I'm definitely a rebel!

3. Would you go to Mars even if it meant you could never return to Earth? Umm, no.

4. Name one song that makes you want to dance every time you hear it. I have a lot of songs that make me want to run, but dance? Hmm. Anyone remember "Keep Me Hangin' On" or maybe "Watermelon Crawl" Lol! Don't judge!

5. Share one thing that you wish you could go back and do differently in your life. I would have never started smoking.

6. Share at least one accomplishment that people wouldn't expect you to be proud of. Eliminating meat/eggs/(99%)dairy from my diet. People who don't understand/acknowledge the cruelty to farm animals just don't understand how proud I am of becoming vegetarian/vegan/plant-strong!

7. Describe one delicious thing that you've eaten lately. Roasted garlic and artichoke hummus ♥

8. If you had a theme song that would play every time you entered a room, which song would you choose? Perfect, by Pink. Or maybe (also by Pink) So What?! Or Never Surrender by Triumph, or No Boundaries by Adam Lambert...

9. Has technology enhanced your life, or has it over complicated your life? Enhanced, absolutely

10. If you could get paid to do any job, which job would you choose? A race pacer, preferably for the half-marathon distance. For the 10-minute milers :)

Still sick, Mud run, & a Shout-out!

After steadily getting worse over the past week or so, I finally went to the doctor on Thursday. I have acute maxillary sinusitis. Yes, a sinus infection. I've been taking antibiotics, Flonase, and Mucinex for 3 days now, and I still feel like crap! I haven't gotten out of bed except to eat and to take the dog out.

Since I can't do much of anything but lay here, watch TV, and surf the internet, I've been trying to make my little blog look a little more festive. I must admit this is not very easy! I used to build computers, design web sites and make my own graphics. Now I can barely remember any html code. Thank goodness for people like Nymfont who do all the hard work and then let us tweak it to our liking :)

Needless to say, I haven't ran since Wednesday and that was hardly a run since I was sniffling and sneezing the entire time. Doc said absolutely no running until at least Monday at the very earliest.

Oh! Speaking of running, looky here:

I have been wanting to do one of these, and this one is on my birthday, and less than an hour away!!

One other thing before I go. I have a friend who received some devastating news the other day and I just wanted to give her a shout-out. Sarah and her adorable son, Cole, have been through hell, but they remain happy, positive, upbeat warriors! Sarah, I love you girl! You are amazing, inspiring, and awesome! I can't even imagine the struggles you go through, yet still manage to be the warrior that you are! The world would be a better place with more people like you in it.

It's literally Wordless Wednesday. I'm home sick with such a horrible sore throat, headache, and laryngitis. I'm going to the doctor tomorrow and hoping it's only a really bad cold or sinus infection, and not pneumonia. Bleh!

Cocoa Nutty Dough Balls

I was going through some of my old food journals today and when I came across one of these entries, I couldn't believe I had forgotten all about these little balls of deliciousness! Must go make some now!

Cocoa nutty dough balls


They taste better than they look ;)

- 1/3c oat flour (you can grind up rolled oats)
- 1/3c ground pistachios
- 1/3c ground cocoa-roasted almonds
- 2 Tbsp Agave Nectar
- 1 Tbsp Maple Syrup
- 1 tsp vanilla extract
- 1/4c chocolate chips (I use Enjoy Life - vegan)

Mix everything together, form into balls, and pop in the fridge for at least a couple hours. If you make 10 balls, they are 100 calories each:

Pondering Personal Thoughts

1. How old would you feel if you didn’t know how old you are? Mid-twenties, definitely. I am healthier and more active now than I've ever been!

2. Are you the kind of friend you’d want to have as a friend? Probably not, to be honest. I'm really not a people person at all. I never know how to talk/act around others. I'm also introverted, shy, and occasionally selfish. But I'm working on it!

3. Look back at the last year. When did you feel most excited about something in your life? I was pretty excited about our move in October, I was really excited about running a half marathon with my brother (this actually ended up not happening but I still ran it on my own, on my treadmill), but I think I was most excited about getting my new bed! Let's just say my life is not all that exciting ;)

4. Have you ever been with someone and not spoken a word, only to walk away thinking that was the best conversation ever? Yes, absolutely!

5. If you won 100 million dollars Monday, would you continue doing whatever you usually do on Tuesdays? I would still take Lucy out for her morning walk while coffee is brewing, and I would probably still get in a run. However, the run would be somewhere exotic, and outdoors instead of on my treadmill in a cramped 2nd bedroom ;) NOTHING else would (EVER) be the same!!!

6. What would you do differently if you knew no one would judge you? I'd most likely participate in more races. I know that most people aren't judging. I really do know that in my head, but it's my fear of being judged that keeps me from doing a lot of races (among other "in front of people" kind of things).

7. Share something you do differently than most people. Hmm. I have no idea. I'll have to think on this one and come back later.

8. What’s one thing that you really want to do that you’ve never done? A full marathon!

9. If you had to move out of state right now, where would you move? Florida, in a heartbeat!

10. What is the one thing that you’d like to change most about the world? I would really like for people to be more compassionate- towards animals, towards other people, and towards themselves.

St. Patrick's Day 10 mile (virtual) Run

I woke up this morning with a sore throat and runny nose, and spent about 6 hours procrastinating this run. It turned out just about as bad as I expected - heh! But, I did do it! And that's more than I can say about my recent Sunday long runs!

I was a complete mess afterwards, and I really thought the last 3 miles were going to kill me.

This was the 2nd race of the #13in2013 series, hosted over at JillConyers.com. The next one I have lined up for this series is a half marathon, on my birthday, June 22nd. That one is for National Pink Day :) I'll definitely be following a training plan, beginning tomorrow. Today's run reminded me that you can't just go from 3.5 mile runs to a 10 mile run without proper training. At least not without consequences.

On that note, I better get a shower, some dinner, and take Lucy for a walk. Hope you all had a great weekend!

TGIF

Is this not the cutest panda ever?! I stole him from Facebook ;)

Weekly wrap-up: I ran only 3 days this week, mostly because of the fainting/dizzy episodes, but throw in the usual tummy troubles as well :(  I did 3 miles on Monday, 3.5 miles on Wednesday, and 3.75 miles Friday (today). I'm still planning on the 10 mile virtual run Sunday for St. Patrick's Day, but I'm not going to "race" it.

My weight for the week has been between 120 - 122. Still 5 pounds more than I'd like to see, but I've been going a little crazy with cookies, hummus, and cookie dough hummus. Heh.

2. I’m embarrassed to say this, but this is actually my first ever brand new bed. I’ve always had hand-me-downs, and they were always full size. This is a King and I can’t wait to have a night without my hubby’s elbow jamming into my spine!

Food Questions

1. What did you eat for dinner last night? A giant salad with sesame sticks and Tahini Lime Sauce (this is the BEST salad dressing and veggie sauce! I think it came from Mama Pea. 1/2 cup water, 1/2 cup tahini, 1/4 cup lime juice, 1/4 cup soy sauce, 1 tbsp minced garlic, and 1 tbsp agave. Just mix it all together and store in air-tight container in fridge).
2. If you could make one food calorie-free for the next year, What would you choose? Reese's Dark, absolutely!
3. How often do you go to the grocery store? At least once a week, usually twice. Depends on how much produce I'm using.
4. Do you make a list before buying groceries? Yes! I use the "Grocery IQ" app- love it!
5. List three things that can always be found in your kitchen. Coffee, peanut butter, non-dairy milk
6. How often do you clean out your fridge? About once per week, usually right after grocery shopping.
7. Do you ever use a slow cooker? If so, will you share a recipe? Yes, I make a slammin' good Mexican Chili. Just dump the following ingredients in and let it cook on low for about 8 hours. Then serve over tortilla chips and top with salsa and guacamole. Ingredients: 1 package Smart Ground Mexican-style, 1 can black beans (drained, rinsed, mashed) or 1 can (Amy's organic) refried beans with green chilies, 1 can crushed black olives w/jalapeno infusion, 1 can chopped green chilies, 1 packet taco seasoning (or make your own), and approximately 2 cups of vegetable broth. 
8. How often do you try new recipes? At least a couple times per week!
9. What is the most delicious meal(s) you make? I make a pretty mean Vegan Lasagna. Even my carnivore husband loves it- tofu ricotta and all ;)
10. Share at least one thing that is currently in your kitchen even though you don’t like it.  My husband's lunch meat- especially ham. Can't stand the smell of it!

Hummus Love

Happy (Meatless) Monday! I didn't get to run this weekend, despite the beautiful weather or the fact my treadmill is FIXED!  Lucy has not only eaten 3 Fitbits, about 12 dog beds, and a laptop (among other minor things), she also did this to my treadmill:



Thankfully, my husband was able to fix it by cutting above the chewed up part and then putting on a new pluggy thing. Whew! I really don't have an extra grand laying around to buy a new treadmill!

I did spend quite a bit of time in the kitchen this weekend. I had been trying out some different "Dessert Hummus" recipes, and I finally came up with the perfect combination of ingredients :)

"Cookie Dough" Hummus

 

Ingredients:
  • 1 (15oz) can of chickpeas, rinsed and peeled
  • 1/4 cup peanut butter
  • 2 tsp vanilla extract
  • 2 tbsp non-dairy milk
  • 1/4 cup maple syrup
  • 1/4 cup non-dairy chocolate chips

Directions:
  1. Add all but the chocolate chips to a food processor and blend until smooth and creamy (make sure there are no “pieces” of the chickpeas left).
  2. Pour into a bowl and fold in the chocolate chips.
  3. Chill for at least an hour.
  4. Serve with graham crackers, apple slices, or eat it right off a spoon!

As for the nutrition information, here’s what you get for a 1/4 cup serving (makes 8 servings) because really, who can eat only 2 tbsp?!

Calories: 175, Fat: 7g, Carbs: 25g (fiber 3g, sugars 11g), Protein: 4.5g.

I'm back! As some of you know my main Google account was hijacked by someone in China. I've been going back and forth on whether or not to even create a new blog, and then deciding between Blogger and Word Press.  As you can see, Blogger won. It's just so much easier to use :)
Please bear with me as I try to get everything set up. In the meantime, try out my new recipe: 

Thai-style Cabbage Noodles

  • 6 oz whole wheat pasta
  • 4 cups shredded cabbage (approx half a head)
  • 12 oz fresh brussels sprouts, chopped or shredded
  • 1/4 cup low sodium soy sauce
  • 1/4 cup peanut butter
  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 1/4 cup lime juice
  • 2 tsp ground ginger
  • 1/2 tsp red pepper flakes

Directions:

  1. Cook pasta according to package directions
  2. In a large pot put all ingredients except the pasta, cabbage and brussels sprouts. Stir over medium heat until it boils.
  3. Add the cabbage and brussels sprouts, reduce heat to low, stir until the cabbage is all coated in the sauce and let cook (on low) for 5-10 minutes (until cabbage is soft).
  4. Add the cooked pasta and mix well. Done!
Makes 4 huge servings. Calories 357. Fat 9.5g. Carbs 58.5g (fiber 8.1g, sugars 18.2g). Protein 12.2g. PointsPlus=9.

Can you say carb loading?! Next time I’m going to try this without the pasta and up the amounts of cabbage and brussels sprouts, and maybe throw in some mushrooms. The sauce itself is just perfect.
